A bush tropical take on the classic gimlet. Pineapple pairs well with the bold flavours of our Lightning gin.
45ml Lightning Gin
30ml Lime Juice
20ml Pineapple Syrup (See recipe below)
Add everything to a shaker filled with ice and shake well. Strain into a chilled coupe glass and garnish with a dehydrated pineapple.
Pineapple Syrup Recipe:
Add 500g diced fresh pineapple, 200g caster sugar and 300ml of water to saucepan set on medium to high heat. Once at a boil reduce heat to gentle simmer. When pineapple is soft, let it rest for an hour. Add contents to a blender and blitz until well mixed. Strain twice and pour into a suitable container.
